Champaran Ahuna Mutton By Uzma Khan

Champaran has its own importance in history, but it is also famous for its non-vegetarian food also. Ahuna Mutton is signature dish of Champaran which cooks slowly in Clay pot over the burning coal

INGREDIENTS

  • 1 kg mutton
  • 1 kg chopped onion
  • 100 gram garlic
  • 50 gram ginger
  • 2 to 3 whole buds of garlic
  • 4 to 5 whole red chilli
  • 4 to 6 green cardamom
  • 8 to 10 black pepper corn
  • 6 to 8 cloves
  • 3 to 4 black cardamom
  • 2 piece cinnamon stick
  • 1 tbsp Cumin powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 11/4 tsp red chilli powder
  • 1 tsp kashmiri mirch powder
  • 1/2 tsp fennel powder
  • 1/2 +1/4 cup preheated mustard oil
  • Salt as per taste

PREPARATION

    Take mutton in cooking vessel, add chopped onion in this.

    Nicely crushed the garlic and ginger and add in mutton, add whole garlic, red chilli, green and black cardamom, black pepper corn, cloves, cinnamon stick, cumin seeds and cumin powder, turmeric, coriander, garam masala, red chilli, kashmiri mirch, Fennel powder, preheated mustard oil and finally add salt, mix well.

    Take a Clay pot and add the remaining preheated mustard oil in pot and spread on all sides to greased wall.

    Transfer the mutton with all masala in the pot.

    Take a roll of dough and arrange on the opening of the pot, place a lid over the dough roll, press it and cover it and seal it, mutton is ready to cook.

    Now take buring coal in a tray, arrange a ring over it to avoid the pot for direct heat otherwise mutton and masala is burn, now place the Handi over the coal.

    Place some burning coal over the lid After 2 to 3 minutes you see that the steam comes out to penetrating the dough, Continue cook for 20 to 25 minutes .

    Now remove the burning coal from over the lid and cover the opening with aluminum foil, hold it carefully, shake it to mix masala and again place the burning coal over the lid and cook again for 20 to 25 mins.

    Again remove the coal from lid and open the lid add chopped fresh coriander and mix.

    Now "Champaran Ahuna Mutton" is ready to serve Serve hot with your favourite bread and enjoy .
