For Shrikhand Parfait
1 cup hung curd
3 tbsp honey
few saffron strands
1/2 tsp cardamom powder
2 tbsp diced mango
2 tbsp diced red apple
2 tbsp diced kiwi
1 tbsp pomegranate
1 tbsp chopped pista
2 tsp chopped almonds
2 tsp toasted sunflower seeds
2 tsp toasted pumpkin seeds
- In a bowl, take hung curd, honey, saffron, elaichi powder and mix well using a whisk until mixture becomes smooth and creamy.
- Fill the mixture into a piping bag with star nozzle.
- Take a serving glass pipe out the shrikhand mixture at the bottom and then top with mango, apple, kiwi and pomegranate. Again pipe out another layer of shrikhand and top with pista, almonds, sunflower seeds and pumpkin seeds.
- Finally top with another layer of shrikhand and garnish with pomegranate and mint sprig. Serve chilled.
Shrikhand is a traditional Maharashtrian dessert. Parfait is traditionally made with cream and sugar syrup. Here, the chef gives this frozen dessert a twist and makes it with hung curd and honey. Shrikhand is also made from hung curd. So, the chef calls this fusion dessert Shirkhand Parfait.
The saffron and cardamom infused mixture is topped with a layer of fruits and a layer of nuts. It is garnished with pomegranate seeds and mint.
